Cheese Carving Class at Camposasso. A Hands-On Tuscan Culinary Experience

Tucked away in San Polo in Chianti, Camposasso is one of those places that instantly makes you slow down and take a deep breath. We were greeted so warmly by Rebecca, and it was fascinating hearing her share how she and her husband discovered the property, planted their vines, and eventually became part of Fixer to Fabulous. Their villa is beautiful, lived-in, and inviting—and the best part? You can actually rent it and experience it for yourself.

I joined a cheese carving and styling that was held at the villa and it felt so relaxed and personal—more like gathering around a table with friends than taking a formal lesson. We learned how to turn simple cheeses into sculptural, generous-looking pieces, focusing on shape, texture, and ease rather than perfection. And of course, we paired it with two of incredible wines: a crisp Vernaccia white and Sasso Rosso, which honestly tasted like silk.

That afternoon was pure magic—good food, great conversation, and a setting that makes you want to linger. It’s the kind of experience that makes you fall in love with Chianti all over again.
